Double Duty Dishes
It’s becoming more common to have wedding guests make special dietary requests at the reception. In order to overcome these challenges and keep costs down caterers are coming up with meal creations that can serve double duty. For example, they might use the same starch and vegetable but replace beef with fish, chicken or portobello mushrooms for vegetarians. If this might be a concern at your reception try to gauge early on how many special requests you might be dealing with and work with your caterer to find a solution during the planning stages.
